Sweet Onion Stuffed Artichokes

  • 4 large artichokes
  • 2 ½ cups bread crumbs
  • ¼ cup finely chopped Italian parsley
  • ½ cup finely chopped medium Sweet D Sweet onion
  • 2 eggs beaten
  • ¼ cups grated parmigiano-regiano cheese plus 4 tsp
  • ¼ tsp of ground black pepper
  • 1 tbsp extra virgin olive oil
  • 2 cups white wine
  • 2 cups chicken broth
Sweet Onion Stuffed Artichokes

Wash the artichokes and trip ½" from top. Remove the stem and snip the tips of the leaves with scissors. Stand the artichokes upright in a saucepan and cover with boiling water. Add 1 cup of white wine. Cover and simmer for 30 minutes. Drain upside down. When cooled, gently spread the leaves apart and remove the choke.

Meanwhile, blend bread crumbs, parsley, Sweet D Sweet onion, eggs, parmigaino-regiano cheese (reserve some cheese for the top), and pepper. Stuff the leaves with the bread crumb mixture, about ½ cup in each. Sprinkle parmigaino-regiano on top of each artichoke, drizzle with olive oil. Stand artichokes upright in saucepan and cover ¾ of the way with chicken broth and one cup of white wine. Bring to a boil. Cover and simmer 1 ½ hours. Carefully remove from liquid and serve hot.

Seafood Dip

  • 1 medium Sweet D Sweet onion chopped
  • 2 lbs. baby shrimp
  • 2 ½ cups of fresh crab meat
  • 2 ½ cups of cream cheese
  • 1 small jar of cocktail sauce
Seafood Dip

Blend all ingredients together. Chill for 1 hour. Serve with your favorite cracker or sliced baguette.

Seafood Dip

Slice up any of your favorite vegetables, zucchini, eggplant, mushrooms, butternut squash and sweet potatoes work great. Slice any of our onions, red, yellow, white or sweet (they will all taste delicious). After you slice the vegetables (you can choose more than one or pick your favorite) slice the onion of your choice and spread them all on a foil lined baking sheet. Drizzle olive oil over all of the vegetables. Season with salt and pepper. Broil veggies on second shelf from the top in the oven for approximately 15-20 minutes. Enjoy the most delicious vegetables with the easiest clean-up!
